Blueberry Loaf

Blueberry Loaf

Yield: 1 loaf

Prep time: 15 minutes

Cook time: 1 hour

Ingredients:

¾ cup brown rice flour

¾ cup buckwheat flour (light or dark)

½ cup almond flour

½ teaspoon sea salt

1 teaspoon baking soda

1 teaspoon baking powder

¼ cup unsweetened applesauce

1 tablespoon apple cider vinegar

2 tablespoons coconut oil, melted

2 eggs

1/2 cup coconut sugar

1 teaspoon vanilla

1 cup blueberries

Directions:

1.     Preheat oven to 350 degrees and grease a loaf pan with coconut oil.

2.     Combine flours, baking soda, baking powder and salt in a medium-sized bowl.

3.     In another medium-sized bowl, whisk together applesauce, coconut sugar, coconut oil, eggs, coconut sugar and vanilla.

4.     Fold the dry ingredients into the wet ingredients until combined.

5. Next, fold blueberries into batter.

6. Pour batter into the greased loaf pan and bake in oven for 50 – 60 minutes.
