Tomato Soup

Tomato Soup

Yields: 4 servings

Prep time: 10 minutes

Cook time: 50 minutes

Ingredients:

2 pounds tomatoes, diced or halved

1 medium onion, diced

6 cloves garlic, peeled

3 tbsps avocado oil

2 cups water

2 bay leaves

1/2 tsp sea salt

1/2 tsp dried oregano

1/2 tsp dried basil

Directions:

  1. Preheat oven to 400 degrees and line a baking sheet with unbleached parchment paper.

  2. Place tomatoes, onion and garlic on baking.

  3. Drizzle with avocado oil and roast for 30 minutes.

  4. Once roasted, transfer to a large pot and add water, bay leaves, salt, oregano and basil.

  5. Simmer for 20 minutes.

  6. Let soup cool, remove bay leaves and blend until you reach a smooth consistency.
