Slow Cooker Chicken Curry

I’m a huge fan of curry dishes and quick and easy meals! This recipe checks off both of these boxes. A curry slow cooker recipe to have cooking while you are out and about running errands or at work. Your house will smell amazing once you get home. I promise!

The flavours are amazing and the aroma is divine! Turmeric and curry spices are all over this dish offering it some anti-inflammatory properties. Add some delicious creamy coconut milk and you have yourself some healthy fats as well. A nourishing warm dish to nourish your senses and soul!

Don’t forget to serve this on some lovely basmati rice or quinoa. Serve it with some Garlic Chapati Bread and you are all set!

Here’s the recipe:

Slow Cooker Chicken Curry

Yields: 4 servings

Prep time: 15 minutes

Cook time: 5 hours

 

Ingredients:

 

1 can coconut milk

½ cup water

2 tablespoons curry powder

1 teaspoon turmeric

¼ teaspoon pepper

¼ teaspoon cayenne pepper (optional)

½ teaspoon sea salt

2 cloves garlic, minced

1 sweet potato, diced

2 carrots, coined

1 small onion, finely chopped

2 boneless skinless chicken breasts

 

Directions:

1.     Put all ingredients in slow cooker except chicken breasts and thoroughly combine.

2.     Place chicken breasts in slow cooker. Make sure chicken is immersed in coconut milk and vegetable mixture.

3.     Cook on high for 5 hours. After 4 hours tear chicken apart with a fork.

4.Cook for another hour and serve on brown rice or quinoa. This Garlic Chapati Bread tastes amazing with this dish!
