That’s S’more like it!

There is nothing I enjoy more than sitting around a fire in the yard or on the beach on a summer’s evening. It can be so calming and almost meditative to watch the dancing flames, listen to the dull crackles and relax at the end of a long day. Lately, I’ve been able to enjoy some beautiful sunsets in front of my fire, too. How could this perfect evening possibly get any better? There’s only one way: topping it all off with some yummy s’mores! I used to eat these sweet, gooey treats as a child; however, discovering some of the ingredients (corn syrup, refined sugar, artificial flavourings, tetrasodium pyrophosphate, and hydrogenated oils – to name a few) I couldn’t contemplate putting them in my body as an adult…until now! I decided to start experimenting in the kitchen to see what I could come up with in terms of a s'more alternative that’s just as tasty as the original, but kinder to the system, and I’m proud to say that I finally developed a gluten- and dairy-free s’more!

Graham Wafer Crackers

Yields: 20 crackers

Prep time: 15 minutes

Cook time: 15 minutes

Ingredients:

¾ cup buckwheat flour

¾ cup brown rice flour (and a little extra for rolling dough)

½ cup almond flour

¼ teaspoon baking powder

¼ teaspoon baking soda

a pinch of sea salt

1 teaspoon cinnamon

½ cup coconut sugar

¼ cup plus 2 tablespoons coconut oil, melted

2 tablespoons honey

2 tablespoons blackstrap molasses

1 teaspoon vanilla

1 egg

2 tablespoons almond milk

Directions:

1.     Preheat oven to 325 degrees and place parchment paper on a large cookie sheet.

2.     Combine flours, baking powder and soda, salt, cinnamon and sugar together in a medium sized bowl.

3.     Add in oil, honey, molasses, vanilla, egg and milk until well combined to form the dough.

4.     Sprinkle a bit of brown rice flour onto a flat surface and place dough on surface. Sprinkle a little extra brown rice flour on dough and roll out to about ¼ inch thickness with rolling pin.

5.     Cut into squares and place on cooking sheet.

6.     Bake for 15 minutes. Remove from oven and let cool.

Fluffy Marshmallow Whip

(Adapted from Michelle Vodrazka's recipe)

Prep time: 15 minutes

Ingredients:

Chickpea water from 1 (540 ml) can of chickpeas

¼ cup coconut sugar

½ teaspoon vanilla

Directions:

1.     Using an electric mixer on its highest setting, mix ingredients together until they become a fluffy mixture, approximately 10 minutes.

2.     Use within ½ an hour of making.

Assembling the S’more

What you will need:

Foil wrap or stainless steel camping cookware

Graham Wafer Crackers

Fluffy Marshmallow Whip

85% Dark Chocolate (I like Camino)

A fire pit with a blazing fire

Directions:

1.     Tear off a small rectangle of foil wrap or use stainless steel cookware. Add a graham wafer cracker and place 2 squares of dark chocolate on top, then place another graham wafer on top of the chocolate.

2.     Wrap in foil wrap or place in stainless steel cookware and place over fire for about 5 minutes or when chocolate has melted, turning over halfway.

3.     Remove from fire and remove the top graham wafer cracker. Add two heaping tablespoons of fluffy marshmallow whip and place graham wafer cracker back on top. Enjoy, then make s'more!

 

Top tip: It is important to add the fluffy marshmallow whip after the rest of your s’more has been warmed on the fire, as it will dissolve when heated.
