I’m always looking for new ideas for my morning and afternoon snacks. I love the distinctive flavour of dill, so I decided to come up with a recipe for Dill Chickpeas! They are super crunchy with a hint of dill flavour. Delicious dill is a favourite in our house and these dill chickpeas are also a healthy snack to enjoy throughout the day. Win-win!

Chickpeas are tasty and versatile. I enjoy them in salads, as a hummus dip or falafel, and as a straight-up snack, as with my Dill Chickpeas. Chickpeas are also full of so many nutrients, including:

·      Fibre

·      Manganese

·      Protein

·      Zinc

·      Folate

Dill Chickpeas

Yields: 2 cups

Prep time: 10 minutes

Cook time: 40 minutes

Ingredients:

1 (540 ml) can chickpeas, drained and rinsed

2 tablespoons extra-virgin olive oil

2 tablespoons dried dill

1 teaspoon garlic powder

½ teaspoon sea salt

Directions:

1.     Preheat oven to 400 degrees and place parchment paper on cookie sheet.

2.     Combine all ingredients together in a bowl and then spread out on cookie sheet.

3.     Place in oven and bake for about 30 - 40 minutes, checking careful not to burn.
